Muscovado is a type of partially refined to unrefined sugar with a strong molasses content and flavour, and dark brown in colour. It is technically considered either a non-centrifugal cane sugar or a centrifuged, partially refined sugar according to the process used by the manufacturer.

Muscovado sugar — also called Barbados sugar, khandsari, or khand — is one of the least refined sugars available. It’s made by extracting the juice of sugar cane, adding lime, cooking the mix to evaporate the liquid, and then cooling it to form sugar crystals.

Muscovado sugar is sometimes described as having a more complex and earthy flavor than granulated sugar, with hints of toffee and a smoky aftertaste. Two types of muscovado sugar can be found in stores: light and dark. Light muscovado has some of its molasses removed.

 

HEALTH BENEFITS

Antioxidants. Because muscovado has more molasses than many other types of sugars, it holds on to some of the antioxidant properties of molasses. Antioxidants help fight the cell damage caused by free radicals. That damage can otherwise contribute to aging and illnesses such as heart disease
